applesauce sweet potatoes

Ingredients:

  • 3 pounds sweet potatoes (about 5 medium) peeled and sliced
  • 1-1/2 cups unsweetened applesauce
  • 2/3 cup packed brown sugar
  • 3 tablespoons butter melted
  • 1 teaspoon ground cinnamon
  • 1/2 cup glazed pecans chopped (optional)

Directions:

  • Boil sweet potatoes until tender, about 30 minutes.
  • In a small bowl mix applesauce, brown sugar melted butter and cinnamon
  • Put potatoes in 9X13 buttered casserole dish
  • Mash potatoes and sprinkle with salt
  • Put applesauce over potatoes
  • Combine cinnamon, sugar and nuts. Sprinkle over applesauce.
  • Dot with butter
  • Bake at 375 for 45 minutes

If desired sprinkle with pecans before serving. serve with a slotted spoon
