brown butter green beans with lemon feta cream
Ingredients:
Green beans
- 1 C pistachios, chopped
- 2 T everything bagel spice
- 1 t cinnamon
- 1 t cumin
- 1.5 lbs green beans
- 1/4 C butter
- 3/4 C pomegranate seeds
- Lemon zest
Lemon Feta Cream
- 8 oz feta
- 1 C plain greek yogurt
- 1 lemon juice
- 3 t olive oil
- 2 cloves garlic
Directions:
- Combine pistachios, everything bagel spice, cinnamon, and cumin in a bowl.
- Heat a pot of water to boil. Cook beans 4-5 minutes until tender crisp.
- While beans cook, prepare lemon feta cream.
- Put all cream ingredients into food processor bowl. Process for about 2 minutes, until smooth, no longer grainy.
- When beans are cooked, remove from heat. Drain.
- Melt butter in s killet until it begins to brown and becomes fragrant. Reduce heat to low.
- Add pistachios and beans. Saute for 5-6 minutes.
- Pour cream on serving platter. Top with beans. Garnish with pomegranate and lemon zest.
