brown butter green beans with lemon feta cream

Ingredients:

Green beans

  • 1 C pistachios, chopped
  • 2 T everything bagel spice
  • 1 t cinnamon
  • 1 t cumin
  • 1.5 lbs green beans
  • 1/4 C butter
  • 3/4 C pomegranate seeds
  • Lemon zest

Lemon Feta Cream

  • 8 oz feta
  • 1 C plain greek yogurt
  • 1 lemon juice
  • 3 t olive oil
  • 2 cloves garlic

Directions:

  1. Combine pistachios, everything bagel spice, cinnamon, and cumin in a bowl.
  2. Heat a pot of water to boil. Cook beans 4-5 minutes until tender crisp.
  3. While beans cook, prepare lemon feta cream.
  4. Put all cream ingredients into food processor bowl. Process for about 2 minutes, until smooth, no longer grainy.
  5. When beans are cooked, remove from heat. Drain.
  6. Melt butter in s killet until it begins to brown and becomes fragrant. Reduce heat to low.
  7. Add pistachios and beans. Saute for 5-6 minutes.
  8. Pour cream on serving platter. Top with beans. Garnish with pomegranate and lemon zest.
