Cauliflower Nachose

Ingredients:

  • 1 head of cauliflower
  • 2 tbsp avocado oil
  • Salt and pepper
  • 1 tbsp garlic powder
  • 1 cup shredded cheddar cheese
  • 1 lb ground beef or meat of choice
  • 1 packet taco seasoning
  • 2 tbsp sour cream (for topping)
  • Tomatoes (for topping)
  • Cilantro (for topping)
  • JalapeƱo (for topping)
  • Shredded lettuce (for topping)

Directions:

  1. Preheat oven to 400
  2. Cut cauliflower into bite sized florets
  3. Place cauliflower on baking sheet lined with parchment paper then spray with cooking spray and sprinkle with salt, pepper, and garlic powder. Cook in oven for 15 minutes.
  4. While cauliflower is roasting, brown ground beef, then add taco seasoning and cook according to package instructions
  5. Once cauliflower is done. Remove from oven and top with ground beef, cheddar cheese, and jalapenos. Return to oven and broil for 3-5 minutes.
  6. Remove from oven and add all other toppings
