Ingredients:

  • 15 shortbread cookies (we used Keebler Sandies Simply Shortbread)2
  •  2 tbsp. unsalted butter
  • 3 8oz boxes cream cheese
  • 1 1/4 C sugar
  • 1/4 C vanilla
  • 4 eggs
  • 3 egg yolks
  • 1/4 C lemon juice
  • 2 TBS lemon zest
  • 1 pint whipping cream - whipped, but not stiff

Directions:

  1. Heat oven to 325°F. Spray an 8 x 3-in. springform pan with nonstick spray.
  2. Process cookies in food processor to make fine crumbs. Add butter; pulse to blend. Press onto bottom of prepared pan. Bake 10 minutes or until set. Cool on wire rack.
  3. Blend cream cheese and sugar.
  4. Add vanilla, lemon juice and zest to mixture. Continue mixing.
  5. Add eggs and yolks one at a time to mixture.
  6. Fold in whipping cream.
  7. Pour into large springform pan.
  8. Bake at 350 for 30 - 45 minutes.
