Ingredients:
- Frozen cauliflower rice
- 1 tbsp butter
- 1 clove garlic
- 1 tbsp chicken stock concentrate
- 1/4 cup monterrey jack cheese
- 2 tbsp sour cream
- 1/4 cup water
Directions:
- Cook cauliflower rice according to package directions
- Once cooked through and water has evaporated, add garlic and cook until fragrant
- Add water and stock concentrate
- Cook stirring until water has mostly absorbed and cauliflower is tender, 2-3 minutes
- Stir in sour cream, Monterey Jack, and 1 TBSP butter until melted
- Remove from heat, if “rice” is too thick, add a splash of water
