Chicken Parmesan Casserole
Ingredients:
- 1 lb chicken breasts or tenderloins
- 1 1/2 cups pork rind breadcrumbs
- 1/2 tablespoon garlic powder
- 1/2 tablespoon onion powder
- 1 tablespoon of garlic and herb seasoning
- Salt and pepper
- 2 cups marinara
- 6 oz mozzarella (fresh sliced)
- Grated parmesan for garnish
- Basil (fresh) for garnish
Directions:
- Preheat oven to 350
- Mix together all dry ingredients in a casserole dish
- Slice tops of chicken in criss-cross pattern
- Pat chicken dry and season all over with salt and pepper
- Coat chicken on both sides in breadcrumb seasoning mixture. Make sure to really get the mixture into the cuts you made on the tops of the chicken.
- Make sure chicken is cut side up and roast in oven for 30 minutes
- Remove from oven and top with marinara and mozzarella
- Turn on broiler and put back in oven for another 3-5 minutes
- Garnish with black pepper, crushed red pepper, parmesan and chopped basil
