Chicken Parmesan Casserole

Ingredients:

  • 1 lb chicken breasts or tenderloins
  • 1 1/2 cups pork rind breadcrumbs
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon onion powder
  • 1 tablespoon of garlic and herb seasoning
  • Salt and pepper
  • 2 cups marinara
  • 6 oz mozzarella (fresh sliced)
  • Grated parmesan for garnish
  • Basil (fresh) for garnish

Directions:

  1. Preheat oven to 350
  2. Mix together all dry ingredients in a casserole dish
  3. Slice tops of chicken in criss-cross pattern
  4. Pat chicken dry and season all over with salt and pepper
  5. Coat chicken on both sides in breadcrumb seasoning mixture. Make sure to really get the mixture into the cuts you made on the tops of the chicken.
  6. Make sure chicken is cut side up and roast in oven for 30 minutes
  7. Remove from oven and top with marinara and mozzarella
  8. Turn on broiler and put back in oven for another 3-5 minutes
  9. Garnish with black pepper, crushed red pepper, parmesan and chopped basil
