cinnamon roll energy bites - HMM

Ingredients:

For coating

  • 2 T almond flour
  • 4 1/2 t coconut sugar
  • 1 t cinnamon

For the Bites

  • 6 Jedjool dates
  • 1 c cashews
  • 1/4 c almond butter
  • 1/4 c coconut oil
  • 1 t cinnamon
  • 1 t vanilla extract
  • 1 c almond flour
  • salt to taste

Directions:

  1. Line a baking sheet with parchment paper.
  2. Place all bites ingredients into a food processor and process until well combined. A sticky dough will form.
  3. Roll into 1"-2" balls. Place on baking sheet.
  4. Combine ingredients for coating in a bowl.
  5. Roll each ball in coating. Replace on baking sheet.
  6. Refridgerate for 30 minutes.
  7. Store in airtight container for up to 1 week.
