Directions:

  1. Cut or lightly pound the chicken breasts into thinner pieces so they cook evenly. Season both sides of the breasts with the garlic powder, Italian seasonings, and salt and pepper.
  2. Add the olive oil to a large skillet over medium-high heat. Add the seasoned chicken and cook for about 6 minutes on each side or until cooked through and no longer pink. Transfer the chicken to a plate then set aside.
  3. Returning to the skillet, add the butter and shallot and sauté until softened.
  4. Add the chicken broth and the Boursin cheese to the skillet. Stir and melt the cheese until you have a creamy sauce.
  5. Pour in the heavy cream and parmesan cheese. Whisk and allow the sauce to heat through and thicken. This will take about 5 minutes.
  6. Add the chicken back into the skillet and let it warm through for a couple of minutes.
  7. Season with salt & pepper if needed and serve over mashed potatoes.
