herb butter stuffed pork roast over creamy red pepper rice

Ingredients:

Pork and herbed butter

  • 4 lb pork neck
  • 11 T butter
  • 3 t parsley
  • 3 t garlic
  • 1.5 t paprika

SAUCE

  • 1.75 oz soy sauce
  • 1 oz honey
  • 2 T mustard seeds
  • 1/2 paprika
  • 1/2 coriander
  • 1/2 pepper

RICE

  • 11 oz rice
  • 2 red peppers, chopped
  • 8.5 oz chicken broth
  • 8.5 oz heavy cream
  • 1/2 t salt
  • 1/2 t pepper

Directions:

PREPARE PORK

  1. Cut a pocket into the pork.
  2. Combine butter and spices. Put butter in pocket.
  3. Combine ingredients for sauce in a small bowl.
  4. Rub over pork.
  5. Cover and marinade for at least 30 minutes.
  6. Heat oven to 300.
  7. Pour rice ingredients into large casserole dish.
  8. Place meat on rice.
  9. Cover dish and cook for 2.5 hours.
  10. Remove cover and cook another 20 minutes.
