mamas pot roast

Ingredients:

  • 3-4 lb rump roast
  • 1 onion-sliced
  • 2 tbs oil
  • salt and pepper
  • 4 tbs flour divided
  • 2 beef bouillon cubes
  • 1 tsp kitchen bouquet
  • water

Directions:

  • Cook onions in oil til soft.
  • While onions cook, season roast with salt and pepper then rub roughly 2 tbs flour over the surface of the roast.
  • Add to pan and brown on both sides.
  • Add enough water to pan to come half way up the roast.
  • Add bouillon cubes and kitchen bouquet.
  • Bring to boil, then cover and simmer until roast is fork tender. check and refill water level as needed.
  • 30 minutes before ready to serve, mix remaining flour with 1 cup of water, pour into pan.
  • Simmer until thickened.

Notes:

I usually add sliced carrots to the pot about an hour before serving
