maple nut baked oatmeal

Ingredients:

  • 1.5 C oats
  • 1 banana
  • 1.5 C unsweetened almond milk
  • 2 T maple syrup
  • 3 T chia seeds
  • 3 T nut butter
  • 1.5 t baking powder

    toppings:

  • 3/4 C walnuts, chopped

  • 1 banana, sliced
  • 1 t. cinnamon

Directions:

  1. Preheat oven to 350.
  2. Place all ingredients, except for toppings, into blender or food processor and blend until smooth.
  3. Transfer batter to 8X8 casserole dish. Top with toppings.
  4. Bake 25-30 minutes. Drizzle with maple syrup.
