Ingredients:

  • 5 oz. Baby Spring Mix 10c
  • 2 med. Granny Smith Apples peeled and chopped into match stick pieces
  • 1/2 c Dried Cherries tart
  • 1/2 c Chopped Walnuts toasted

For Dressing:

  • 1/4 cup (60 ml) extra-virgin olive oil
  • 1/4 cup (60 ml)pure maple syrup (preferably Grade B)
  • 2 tablespoons (30 ml) apple cider vinegar
  • 1 teaspoon finely grated lemon zest
  • 2 tablespoons (30 ml) freshly squeezed lemon juice
  • 1/2 teaspoon kosher salt ,or to taste
  • 1/4 teaspoon black pepper ,or to taste

Directions:

  1. Toast walnuts in a skillet over medium-high heat for 1 minute. Set aside.
  2. Peel and cut apples into match stick pieces.
  3. Toss greens with apples, cherries and 1/4c walnuts.
  4. Toss with enough dressing to coat.
  5. Divide equally among bowls/plates.
  6. Sprinkle with remaining walnuts.
  7. Enjoy!
