Parmesan crusted potatoes

Ingredients:

  • 1 lb mini yukon potatoes
  • 2 T olive oil
  • 1 T parsley
  • 1 T garlic powder
  • 1/2 t salt
  • 1/2 t pepper
  • 1/4 C butter, melted
  • 1.5 C parmesan cheese, grated

Directions:

  1. Preheat oven to 425.
  2. Wash potatoes, cut them in half, and score in crisscross pattern.
  3. Combine oil, parsley, garlic powder, salt and pepper in a bowl.
  4. Toss potatoes in bowl with seasonings.
  5. Melt butter and pour in bottom of casserole dish.
  6. Mix in parmesan.
  7. Put potatoes in casserole dish, cut side down.
  8. Bake for 25 minutes.
  9. Let rest for 10 minutes so cheese hardens.
