Parmesan crusted potatoes
Ingredients:
- 1 lb mini yukon potatoes
- 2 T olive oil
- 1 T parsley
- 1 T garlic powder
- 1/2 t salt
- 1/2 t pepper
- 1/4 C butter, melted
- 1.5 C parmesan cheese, grated
Directions:
- Preheat oven to 425.
- Wash potatoes, cut them in half, and score in crisscross pattern.
- Combine oil, parsley, garlic powder, salt and pepper in a bowl.
- Toss potatoes in bowl with seasonings.
- Melt butter and pour in bottom of casserole dish.
- Mix in parmesan.
- Put potatoes in casserole dish, cut side down.
- Bake for 25 minutes.
- Let rest for 10 minutes so cheese hardens.
