potato soup

Ingredients:

  • 3 medium potatoes, cubed
  • 2 beef bullion cubes or 2 cups beef broth
  • 2 C milk
  • 1 C cream
  • 3 T flour
  • 2 T butter, softened
  • 1 C grated cheese
  • 1 T minced onion
  • 1/8 t paprika
  • 1/2 t salt
  • 4 slices bacon, cooked (garnish)

Directions:

  1. Boil potatoes until fork tender (about 15 minutes)
  2. Reserve 2 C potato water.
  3. Combine potatoes, water, beef broth, milk, and cream.
  4. Blend butter with flour.
  5. Add butter to pot with potatoes, stir until thick.
  6. Add remaining ingredients
