pumpkin pie (Grandma's recipes)-makes 2 pies

Ingredients:

pie crust - makes 2 crusts

  • 1.5 C flour
  • 1.5 tsp sugar
  • 1 tsp salt
  • 1/2 C corn oil

pie filling - makes enough filling for 2 pies

  • 2 C pumpkin (1 lb can)
  • 1.5 C sugar
  • 1/2 t nutmeg
  • 2.5 C milk
  • 2 eggs
  • 2 heaping T flour
  • 1 tsp cinnamon
  • 4 Tbs brown sugar (can substitute ginger and cloves to equal 4 TBS)

Directions:

For pie crusts

  1. Sift flour, sugar and salt into pie plate
  2. Add milk to oil and whip with fork.
  3. Add to pie plate. Stir with fork.
  4. Split dough between two pie plates.
  5. Press with fingers to shape.

For filling

  1. Beat eggs till frothy.
  2. Add sugar mixed with flour and spices.
  3. Add pumpkin and milk.
  4. Blend and pour into pie crusts.
  5. Bake 350 degrees for 50 minutes or till set.
