Ingredients:
- 2 c pinto beans
- 1/4 lb ham (or salt pork)
- 1/4 andouille or other smoked sausage links (i use italian)
- 1 onion diced
- 2 stalks celery diced
- 1 green pepper diced
- 1/4 c parsley chopped
- 1 bay leaf
- 1 tsp thyme
- 3 garlic cloves
- 1 tbs worcestershire sauce
- tabasco to taste
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 c cooked rice
Directions:
- Soak beans over night
- Drain beans, then add enough fresh water to cover by 2 in
- Bring water to boil, then reduce heat to medium
- Cook 1 1/2 hours or until tender to bite, do not overcook
- Add water as needed
- In the mean time cook sausage
- Add remaining ingredients, except rice, and additional water to ingredients covered
- Simmer 45 minutes to 1 hour, until water has thickened
- Adjust seasonings
- Remove salt pork, if used, and serve over rice
