red beans and rice

Ingredients:

  • 2 c pinto beans
  • 1/4 lb ham (or salt pork)
  • 1/4 andouille or other smoked sausage links (i use italian)
  • 1 onion diced
  • 2 stalks celery diced
  • 1 green pepper diced
  • 1/4 c parsley chopped
  • 1 bay leaf
  • 1 tsp thyme
  • 3 garlic cloves
  • 1 tbs worcestershire sauce
  • tabasco to taste
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 c cooked rice

Directions:

  • Soak beans over night
  • Drain beans, then add enough fresh water to cover by 2 in
  • Bring water to boil, then reduce heat to medium
  • Cook 1 1/2 hours or until tender to bite, do not overcook
  • Add water as needed
  • In the mean time cook sausage
  • Add remaining ingredients, except rice, and additional water to ingredients covered
  • Simmer 45 minutes to 1 hour, until water has thickened
  • Adjust seasonings
  • Remove salt pork, if used, and serve over rice
