4 carrots - cut into 2" thick strips
1 lemon - zested
olive oil
salt and pepper
toss carrots with olive oil, salt and pepper.
roast in 425 oven for 15-18 minutes
remove from oven and toss with lemon zest, then squeeze lemon juice over
serve
