Roasted Red Pepper Salmon

Ingredients:

  • 2.5-3 lbs Salmon
  • 1 Red pepper
  • 5-6 cloves Minced garlic
  • 1-2 tbsp Honey
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 1/2 tsp Red pepper flakes
  • 1 tsp dried parsley
  • 1 tbsp Avocado oil
  • 1/2 Lemon juice
  • Salt & pepper
  • Minced basil, parsley, and garlic
  • 2 tbsp cream cheese
  • Green beans
  • Riced cauliflower (frozen)

Directions:

  • Preheat oven to 410 degrees
  • Deseed and slice red pepper into 4 long pieces
  • Heat skillet over medium high heat and add red pepper slices skin side down. Cook until browned.
  • Line baking sheet with parchment paper
  • Prepare green beans and toss with on one side of baking sheet with salt, pepper, and garlic powder. Put in oven while preparing salmon.
  • Once peppers have finished roasting, remove from pan and let cool. Once cool mince peppers until they reach a paste like consistency.
  • Prepare salmon dressing. Combine minced roasted red pepper, garlic, honey, paprika, garlic powder, red pepper flakes, parsley, and 1 slice of lemon juice.
  • Pat salmon and place on baking sheet with green beans. Season all over with salt and pepper and then place dressing all over salmon.
  • Place back in oven for 14 mins
  • Prepare frozen cauliflower while salmon cooks. Add to small pot and heat until all moisture has evaporated. Once cooked through add 1tbsp of butter and seasonings of choice.
  • After salmon has cooked through, set to broil 2-4 mins
  • Remove salmon and green beans from oven. Plate with cauliflower rice and enjoy.
