sheet pan pineapple chicken - homemade method
Ingredients:
- 1 lb chicken, cubed
- 1 red bell pepper, cubed
- 1 yellow pepper, cubed
- 1 green pepper, cubed
- 1 red onion, diced 1" pieces
- 2 T olive oil
- salt to taste
- pepper to taste
- 20oz pineapple tidbits, in juice - divided
- 3 C cooked brown rice
2 green onions, sliced
Sauce:
- 2 cloves garlic
- 2 T soy sauce
- 1/4 C chicken stock
- 2 T coconut sugar
- 1/2 jalapeno, sliced
- 1 T cornstarch
- 1 T water
Directions:
- Preheat oven to 350.
- Line baking sheet with foil.
- Cook rice according to directions.
- Combine chicken, peppers onion, salt, pepper and olive oil.
- Spread mixture onto baking sheet.
- Drain juice from pineapple, reserve. Add 1/2 pineapple to baking sheet.
- Bake 20 minutes.
- Prepare sauce: Whisk together remaining pineapple, juice, garlic, soy, jalapeno, sugar and chicken broth in a small sauce pan.
- Cook until thickened, about 2-3 minutes.
- Serve over rice, drizzled with sauce and sprinkled with green onions.
