Swiss Cheese Pie (Quiche)

Ingredients:

  • 1 pie crust, for 9-inch pie
  • 1 TB butter, melted
  • 1/4 lb swiss cheese, grated
  • 18 small pieces of bacon, cooked
  • 2 cup heavy cream
  • 4 eggs, well beaten
  • 3/4 t salt
  • 1/8 t nutmeg
  • 1/8 t sugar
  • 1/8 t pepper
  • 1/16 t cayenne

Directions:

  1. line pie dish with pastry.
  2. brush butter over pie crust.
  3. distribute cheese and bacon evenly in pie dish.
  4. beat eggs well; mix with milk and seasonings.
  5. pour over cheese.
  6. bake 15 minutes in hot oven (425 degrees),
  7. then reduce to 300 degrees and bake an additional 40 minutes or until knife inserted in center of pie comes out clean.
  8. let stand 5 minutes before serving.
