Swiss Cheese Pie (Quiche)
Ingredients:
- 1 pie crust, for 9-inch pie
- 1 TB butter, melted
- 1/4 lb swiss cheese, grated
- 18 small pieces of bacon, cooked
- 2 cup heavy cream
- 4 eggs, well beaten
- 3/4 t salt
- 1/8 t nutmeg
- 1/8 t sugar
- 1/8 t pepper
- 1/16 t cayenne
Directions:
- line pie dish with pastry.
- brush butter over pie crust.
- distribute cheese and bacon evenly in pie dish.
- beat eggs well; mix with milk and seasonings.
- pour over cheese.
- bake 15 minutes in hot oven (425 degrees),
- then reduce to 300 degrees and bake an additional 40 minutes or until knife inserted in center of pie comes out clean.
- let stand 5 minutes before serving.
