Tuna Artichoke Wraps

Ingredients:

  • 15 oz artichoke hearts
  • 1/2 c green olives
  • 2 5 oz cans tuna
  • 2 t capers
  • 2 t olive oil
  • 1/2 lemon, juice and zest
  • salt, to taste
  • avocado, sliced
  • romaine lettuce

Directions:

  1. in food processor, combine artichokes and olives. mix tuna, capers, olive oil, lemon juice and zest, salt, and artichoke mixture in a bowl.
  2. spoon small amount into lettuce leaves.
  3. add sliced avocado
