walnut broccoli apple slaw

Ingredients:

DRESSING

  • 3 TBS olive oil
  • 3 TBS lemon juice
  • 1.5 TBS honey
  • 1/2 tsp salt apple cider vinegar
  • 1/2 tsp ginger
  • pepper to taste

    SALAD

  • 1 12 oz bag (4 cups) broccoli slaw

  • 1/2 cup dried cranberries
  • 1 apple unpeeled and diced
  • 3/4 cup walnuts coarsely chopped
  • 1/4 cup diced red onion

Directions:

  1. Whisk together dressing ingredients until smooth.
  2. Combine salad ingredients coa.

Notes

  • This recipe can be served immediately, but the flavors improve after a few hours in the fridge. It will keep well for about 24 hours in the fridge- after that, it may be a bit soggy.
