Wedge Salad

Ingredients:

  • 1 head iceberg lettuce
  • high-quality blue cheese dressing preferable [homemade|http://www.thewickednoodle.com/buttermilk-blue-cheese-dressing/
  • crumbled blue cheese
  • 1/2-1 pound bacon cooked and crumbled
  • 1/4 cup balsamic reduction
  • 16 or so cherry tomatoes quartered

    DRESSING

  • 2 cups crumbled blue cheese, or more if preferred

  • 1 garlic clove, minced
  • 2 cups mayonnaise, store-bought or homemade
  • 2 cups buttermilk
  • 2 dashes worcestershire sauce
  • 1 teaspoon kosher salt, or to taste
  • 1 teaspoon freshly ground black pepper, or to taste

Instructions For Dressing

  1. Mix all ingredients in a medium-sized bowl. Chill for at least an hour before using to allow flavors to meld. Store in refrigerator for up to two weeks.

  2. remove core from lettuce.

  3. cut lettuce head in half, then cut each half into quarters.
  4. place on serving tray (or individual plates).
  5. drizzle each lettuce wedge with dressing and balsamic reduction.
  6. sprinkle with blue cheese, crumbled bacon and cherry tomatoes.
  7. serve immediately.
